Typically, a set of knives in a wooden block is given as a gift. It's a great idea, but in reality, only one or maybe two of the knives are ever used on a day-to-day basis. And these knives quickly dull, because they usually are made from cheap steel and have plain edges.

We started with the incredibly tough, premium AUS 8A stainless steel found in our Tantos, rolled to a thickness of 1.5 mm. The traditional "Hocho" style blades are 1 1/2 inches wide. They are flat ground from top to bottom and then honed to a serrated edge that is astoundingly sharp. The edge also has a continuous curve from the handle, right to the point. This configuration results in unparalleled shearing potential. Now you can slice tomatoes wafer thin and cut through vegetables and meat with virtually no resistance.

Months of development and testing paid off on our exclusive serration pattern. It simply outperforms the competition to provide smooth long lasting cutting power.
